White Mushrooms

Description: The most popular mushroom, these vary in colour from white to light brown and are available in sizes from small to large stuffer.
Flavour: A mild flavour which intensifies when cooked. Mature mushrooms with open veils have a deeper richer taste.

Brown Mushrooms

Description: Look for a dark cap that ranges in colour from light tan to rich brown
Flavour: Earthier, meatier, more intense flavour than the White Mushrooms

Portabello Mushrooms

Description: Growing up to 6 inches (15cm) across, it is a larger hardier relative of the White and Crimini Mushroom. The flat caps are tan to dark brown and the roots are often left attached.
Flavour: A deep, meaty flavour and texture

Specialty Mushrooms

Shiitake Description: Ranging in colour from tan to dark brown, these have umbrella shaped caps, open veils and tan gills. Flavour: Rich, woodsy flavour with a meaty texture when cooked
Oyster
Description: The fluted cap resembles a fan, the colours range from a soft beige-brown to grey. Flavour: Can be eaten raw, but more often cooked to bring out the delicate flavour and velvety texture
